The potato patty is a satisfying and practical hot appetizer, in which boiled and mashed potato is kneaded with a spiced mixture and fried into patties. In Gaziantep cuisine, hot appetizers come to the table between cold mezes and the main course, and the potato patty is one of the most beloved warm options on that table.

In its traditional making the potatoes are boiled, peeled, mashed and left to warm down. Egg, flour, finely chopped parsley and spices are added to make a mixture that holds together. The mixture is shaped into patties by hand and coated in egg, ready to fry.

When fried, the outside crisps up while the inside keeps the softness the potato gives. The warmth of the spices is felt on the palate with every bite. You can enjoy them on their own as a snack, alongside soup, or with salad as a light meal.

At Antepside we prepare the patties fresh each day and send them raw. At home you simply fry both sides in hot oil until golden. That way you enjoy the taste of patties that are crisp outside, soft inside and wonderfully fresh, as if they just came out of the oven, in your own kitchen.

The product reaches you as raw patties. Fry both sides in hot oil over medium heat until golden. If you prefer, you can also cook them in a pan with a little oil or in the oven.

You can keep the raw patties in a sealed container in the refrigerator for a day or two, or longer in the freezer. Resting the patties briefly in the refrigerator before frying helps them brown nicely without falling apart in the oil.
