Zucchini Fritters (Raw)

A mücver mixture made with coarsely grated fresh zucchini, egg, flour and plenty of greens, carrying the fresh scent of parsley and dill within it. Once its water is carefully squeezed out, the mixture crisps up on the outside when fried while keeping the softness the zucchini gives it inside. We send this product raw. At home you spoon it into a pan, fry both sides until golden and serve it piping hot.

The zucchini hot appetizer is a light delight rooted in the mücver tradition, in which coarsely grated fresh zucchini is kneaded with egg, flour and greens, then fried in oil. In Gaziantep cuisine, hot appetizers are the warm starters that come to the table between cold mezes and the main course, and the zucchini plate is one of the most beloved light options in that transition.

In its traditional making the zucchini is grated and its water carefully squeezed out, then bound with egg and flour so the mixture does not fall apart. Plenty of parsley, dill and spring onion lend a fresh aroma. Seasoned with salt and black pepper, the mixture is spooned into hot oil and cooked until it turns golden.

When fried, the outside crisps up while the inside keeps the softness the zucchini gives. The freshness of the greens is felt on the palate with every bite. You can enjoy it with garlic yoghurt, as a snack between meals or as a side dish alongside the main course.

The product reaches you as a raw mixture. Spoon it into a pan with hot oil and fry both sides over low heat until golden. You can serve it with garlic yoghurt.

You can keep the mixture in a sealed container in the refrigerator for a day or two, or longer in the freezer. Draining off the excess water before cooking helps the fritters turn out nice and crisp.
