The zucchini hot appetizer is a beloved dish from the mücver tradition, prepared by blending grated fresh zucchini with egg, flour and plenty of greens, then frying it in oil until golden. On Gaziantep tables, hot appetizers are the warm starters served between cold mezes and the main course, and this plate is one of the lightest stops in that enjoyable transition.

In the traditional recipe the zucchini is grated coarsely, its water is squeezed out well, and egg and flour are added as binders so the mixture holds together. Finely chopped parsley, dill and spring onion give the blend a wonderfully fresh aroma. Seasoned with salt and black pepper, the mixture is spooned into hot oil and cooked until both sides are browned.
