In the traditional recipe the potatoes are boiled in their skins, peeled, mashed well and left to cool a little. Egg, flour, finely chopped parsley, salt and black pepper are added to make a mixture that holds together. The patties are shaped by hand, coated in egg and fried in hot oil until both sides turn golden.
With their crisp outside and soft inside, the heartiness of the potato and the warmth of the spices are felt in every bite. You can enjoy them on their own as a snack, or as a light meal alongside soup and salad. Served with garlic yoghurt, their taste rises another level.
