The potato hot appetizer is a warm starter everyone enjoys, in which wedge cut potatoes meet spices and are roasted golden in the oven. In Gaziantep cuisine, hot appetizers are served between cold mezes and the main course, and the spiced potato is one of the most practical and enjoyable options on that table.

In its traditional making the potatoes are cut into wedges and tossed well with olive oil, salt, black pepper, red pepper flakes, thyme and cumin. Arranging the wedges in a single layer on a tray is important so they stay crisp. As they roast in the oven the scent of the spices fills the kitchen and gives the potato an appetizing taste.

When it comes out of the oven the outside crisps up while the inside stays soft. The balance of the spices is felt on the palate with every bite. You can enjoy it on its own as a snack, alongside sauces, or as a side dish with meat and chicken dishes.

At Antepside we cut the potatoes fresh each day, toss them with their spices and send them raw. At home you simply spread them in a single layer on a baking tray and roast them in a preheated oven until the outside browns. That way you prepare a piping hot, wonderfully fresh and crisp potato appetizer in your own kitchen.

Its natural content does not include the major food allergens (gluten, milk, egg, tree nuts). Our products are prepared in the same facility as products containing gluten, milk, egg, tree nuts (Antep pistachio, walnut) and sesame, so cross contamination may occur.

The product arrives raw and marinated in its spices. Arrange it in a single layer on a tray lined with parchment and roast it in a preheated 200 degree oven until the outside turns golden. If you like, you can also fry it in hot oil.

You can keep the marinated potatoes in a sealed container in the refrigerator for a day or two. Arranging the wedges in a single layer without touching lets them roast crisp instead of steaming.
