Börek is a time honoured pastry of Anatolian cuisine, prepared by folding thinly rolled yufka sheets around a filling. On the Gaziantep table, the hand rolled yufka opened with a rolling pin is the secret of the pastry's crispness thanks to its thin and sturdy structure. The filling of the kavurma börek comes from beef kavurma cooked for a long time in its own fat.
Kavurma is prepared by cooking cubed or finely chopped beef together with onion over low heat until it draws in its juices and releases its fat. Seasoned with black pepper and red pepper flakes, this traditional filling is carefully placed between the layers of yufka. Its intense meaty aroma is beautifully balanced by the simplicity of the dough.
Fresh from the oven, kavurma börek is crisp on the outside and soft on the inside. The deep flavour of the meat kavurma that unfolds with every bite finds a perfect harmony with a glass of strong black tea. It is a filling choice both at the breakfast table and as an evening treat.

Without thawing the börek, place it in a preheated oven at 180 degrees and bake for about 25 to 30 minutes until the top is golden. If you prefer, you can also cook it in a pan over low heat until both sides are browned.
You can keep the raw börek in the refrigerator for a few days and in the deep freezer for longer. It is at its most delicious fresh from the oven while still hot. We recommend serving it with a glass of strong brewed tea.
