Spinach Börek (Raw)
Fresh spinach, washed and chopped, is lightly sautéed with finely chopped onion, seasoned with salt and black pepper and, if desired, enriched with curd cheese. This green and nourishing filling is wrapped in yufka thinly opened with a rolling pin to form a light börek. Börek is a time honoured delicacy of Anatolian cuisine, where thinly opened yufka sheets are folded with a filling and baked. Carefully opening the hand rolled yufka with a rolling pin is the foundation of the pastry's layered and crisp texture. The filling of the spinach börek is prepared from fresh spinach in its season.

Without thawing the börek, place it in a preheated oven at 180 degrees and bake for about 25 to 30 minutes until the top is golden and crisp. You can also cook it in a pan over low heat, turning both sides.
You can keep the raw börek in the refrigerator for a few days and in the deep freezer for longer. Spinach börek is at its most delicious fresh from the oven while hot. Serve it with a glass of strong brewed tea.
