Eggplant kebab is one of the most loved tray dishes of Gaziantep cuisine. The crown of Antep tables in the summer months, this kebab is prepared by arranging spiced meatballs and eggplant alternately. It is one of the classic flavors of neighborly and holiday tables that the local people send to the oven to be baked.

In its traditional making, fatty or half fatty mince is kneaded with salt, black pepper and red pepper flakes, left to rest and then shaped into meatballs. The eggplants are sliced and kept in salted water to remove their bitterness. The meatballs and eggplants are arranged in the tray in turn, with tomato and pepper placed between them. Paste thinned with water and oil is drizzled over the top and it is baked in the oven.

Once cooked, the eggplant draws in the fat and spice of the meatballs, resulting in a soft, juicy and aromatic kebab. The aroma of tomato and garlic adds depth to the meat. It is served alongside warm lavash, plain rice, ayran and roasted pepper. Dipping bread into the sauce in the tray is the traditional pleasure of this dish.

Store the product in the refrigerator and consume it within a short time. You can present it alongside warm lavash, plain rice and roasted pepper, and enjoy soaking up the sauce in the tray with bread.
