Kilis kebab is a time honored Southeastern delicacy baked in a tray, taking its name from Kilis, a neighbor city of Gaziantep. One of the symbols of Kilis cuisine, this dish is traditionally prepared at home in the region and sent to neighborhood ovens to be baked. It is also known as tray kebab and holds a special place in the dining culture of the area.

In its authentic recipe the meat is prepared with mince cut by knife rather than by machine. The mince is kneaded well with onion, garlic, tomato, green pepper, parsley and pepper paste. Thinly sliced potato is laid at the bottom of the tray in winter months and eggplant in summer months. The spiced meat mixture is spread over it, crowned with tomato and pepper slices and baked until it turns golden.

The result is a kebab with a lightly browned surface and a juicy, filling interior. The spice of the meat, the softness of the potato and the tangy freshness of the tomato balance one another. You can set a delicious table alongside warm lavash, roasted pepper and tomato, a bowl of ayran or plain rice. Soaking up the juicy sauce in the tray with bread is the most loved part of this dish.
