Pistachio Kadayif

Pistachio kadayif is another classic of Gaziantep cuisine that walks shoulder to shoulder with baklava. Plenty of green Antep pistachios are placed between the special dough poured in fine strands, then baked and sweetened with syrup. The city's mastery of shredded kadayif takes this dessert to a special place with its crispness and richness of pistachios.

In the traditional method the shredded kadayif is rubbed with melted clarified butter so that every strand is worked with fat. Half of the buttered kadayif is spread over the tray and pressed, plenty of Antep pistachios are scattered over it, and the remaining kadayif is laid on top like a lid. The tray is baked in an oven at close to two hundred degrees until both sides turn golden, and cold syrup is poured over it while hot.

When served, the strands on the outside are crisp and the pistachio filling inside is fresh and aromatic. The syrup lightly coats the strands and keeps the dessert balanced without weighing it down. You can sprinkle a handful of pistachios on top and serve it warm or lukewarm with a cup of Turkish coffee.

Pistachio kadayif reaches you with its syrup absorbed and ready to serve. You can store it in a cool and dry place or in a closed container in the refrigerator. To preserve its freshness we recommend consuming it within a short time.

It is at its most delicious in the first days. If you wish, before serving you can warm it slightly in the oven or microwave for a few seconds to bring back the crispness of the strands, then serve it with a handful of pistachios sprinkled on top.
