Walnut Kadayif
A filling of coarsely crushed walnuts is placed between fine strands of kadayif dough poured strand by strand over a hot plate, then baked until both sides turn golden. The strands on the outside are crisp, the walnut filling inside is soft and satisfying, and the measured syrup coats the dessert without weighing it down. It arrives with its syrup absorbed and ready to serve, and you can offer it warm or lukewarm with a sprinkle of walnuts on top.

Kadayif is a traditional Turkish dessert made by spreading and baking a special dough poured in fine strands over a hot plate, sweetened with syrup. Walnut kadayif is a beloved variety in which coarsely crushed walnuts are placed between these crisp strands. Gaziantep cuisine has a deep rooted tradition of working shredded kadayif with mastery.
In the traditional method the shredded kadayif is rubbed with melted clarified butter so that every strand is worked with fat. Half of the buttered kadayif is spread over the tray and pressed by hand, the filling of coarsely crushed walnuts is spread over it, and the remaining kadayif is laid on top like a lid. The tray is baked in an oven at close to two hundred degrees until both sides turn golden, and cold syrup is poured over it while hot.
When served, the strands on the outside are crisp and the walnut filling inside is soft and satisfying. The syrup coats the strands but does not weigh them down, and the walnut aroma stands out. You can sprinkle a handful of walnuts on top and serve it warm or lukewarm with a cup of Turkish coffee.

Walnut kadayif reaches you with its syrup absorbed and ready to serve. You can store it in a cool and dry place or in a closed container in the refrigerator. To preserve its freshness we recommend consuming it within a short time.
It is at its most delicious in the first days. If you wish, before serving you can warm it slightly in the oven or microwave for a few seconds to bring back the crispness of the strands, then serve it with a handful of walnuts sprinkled on top.
