Pistachio baklava is the world famous symbol of Gaziantep cuisine. Plenty of green Antep pistachios are scattered between sheets of dough rolled as thin as tulle, crowned with clarified butter and measured syrup. This variety, the first that comes to mind when baklava is mentioned, is the most magnificent fruit of the city's centuries old master and apprentice tradition.

In the traditional method the dough is rolled out with a thin rolling pin until it turns transparent, and melted clarified butter is brushed between the layers. Raw and unroasted Antep pistachios are used for the filling, eight to ten sheets are placed on the bottom and top, and pistachios are placed generously in the middle. The baklava is thinly sliced before it goes into the oven, baked until it turns golden, and cold syrup is drizzled over it while hot.

In the first bite the crispness of the pastry, the rich taste of the clarified butter and the fresh aroma of the pistachios envelop the palate all at once. The syrup is measured, keeping the dessert balanced without tiring your mouth. A plain Turkish coffee or a strong tea alongside brings out the flavour of this classic fully.

Pistachio baklava reaches you with its syrup absorbed and ready to serve. You can store it in a cool and dry place or in a closed container in the refrigerator. To catch it at its freshest we recommend consuming it within a short time.

Baklava is at its most delicious in the first days. If you wish, before serving you can warm it slightly in the oven or microwave for a few seconds to refresh the crispness of the pastry and the aroma of the pistachios.
